My Favourite Meals to Have For Dinner

I look forward to every meal in my day, and so should you! You’ll never stick to a plan unless you enjoy what you eat…

I wanted to share some of my favourite meals with you which I hope will inspire you to try something different. When I plan my meals, I consider the following:

  • Is it quick to cook and prepare?

  • Does it have fat, protein, and carbohydrates?

  • How many vegetables can I pack into it? (Especially hidden vegetables because we don’t all like the same ones!


Try one of these this week

  1. Nachos (use tofu to replace meat and vegan cheese for a plant-based option)

  2. Tacos (use tofu or plant-based substitute to replace meat, vegan cheese for a plant-based option)

  3. Crunch wraps with tofu crumble (replace tofu with meat if you don’t want plant-based)

  4. Green goddess pasta topped with spicy tofu crumble for an added crunch factor! (Use gluten-free pasta if intolerant or coeliac and can omit tofu if that is not your thing)

  5. Peanut butter tofu stir fry with basmati rice (can omit tofu and replace with meat if you don’t want plant-based)
